The Amateur's Kitchen - Tuna-Apple Primavera on Farfalle

Audit's up on Monday. Stress! Took advantage of the morning weekend before going to work again to cook the zucchini and parsley I bought a week ago and attempt on an original Primavera recipe... for mom. ^.^


Tuna-Apple Primavera on Farfalle

Pasta Farfalle (or Penne)
Butter
Garlic, minced
Green Onions
Bell Pepper, cubed
Parsley, chopped
One can Tuna in Vegetable Oil (save the oil)
Garlic Powder
Salt 'n Pepper
Zucchini, cubed
Carrots, cubed
Milk
Cream Cheese
Red Apples, cubed
Walnuts, chopped



Cook pasta according to package directions. Melt butter with vegetable oil from tuna on a skillet. Saute garlic, green onions, bell pepper and parsley. Add Tuna. Season with garlic powder, a dash of salt and pepper. Add cubed zucchini and carrots and cook for around 2 minutes. Add cream cheese and milk, simmer. Toss in apples and cooked pasta and stir. Garnish with walnuts and chopped parsley. Serve.
